Brewers and woodland drinksThere are several small wineries and breweries around Scotland producing alcoholic drinks from woodland species such as birch (sap), elder (flowers and berries), oak (leaves), heather, rowan, bramble and meadowsweet. The Heather Ale Company, one of the largest of these businesses, also uses pine and spruce foliage for flavouring ales. The raw materials are usually gathered from the local woods, either by company employees or seasonally contracted staff.
