Grey squirrel (Sciurus carolinensis)

Description

Long-tailed arboreal rodent, usually with grey fur (not to be confused with the indigenous red squirrel). Distinguished by lack of ear tufts, and by the white 'halo' round the tail.

Habitat

Woodland.

Uses

Squirrels make good eating, especially for people who want only a small amount of meat. They can be trapped relatively easily. Squirrel is not generally sold as game. There is no closed season. Soaking the meat in cold water before cooking can reduce the 'gamey' flavour, if so desired.

Other information

Originally introduced from the USA, these squirrels are thought to have driven the native red squirrels from much of their natural habitat. Grey squirrels are more adaptable, can digest food which is unavailable to reds, and also carry the squirrel pox virus - harmless to greys, lethal to reds.
